Dude, where's my new blog post?

It has been awhile since my last blog. Last quarter did a hostile takeover of my entire life. Spending quality time with my kids, husband {mind you, not enough}, and doing homework was at the top of my list 24/7 (seriously). Honestly, it was the worst decision that I’ve ever made; that I would continue to make over and over again. Sometimes the real you can be revealed when you are under pressure and although I did get cranky once in a while, I still felt like I overcame the stressful 10 weeks as an improved individual. Through it all, I’m still a 4.0 student who attends class 100% of the time.  Yippee, small celebration for me {insert golf clap here}.
Now moving on to the important stuff: I’m still a veggie eater. First, so I won’t feel guilty, I did have a piece of halibut about 4 weeks ago. Justin and I were blessed to go out on a date over Labor Day while my Mom was visiting from Colorado. We had an old gift certificate to a steakhouse in SLC, that needed to be used. My only option was fish or a piece of lettuce, so I chose fish. Even the fish gave me a small stomach ache the next day. Since that {stupid} day in September, no other animal has been hurt during the day to day life of me! It’s been 3 months and 6 days, since I started on my journey of not eating animals {mainly all the junk people put in animals}.
Short story; one day I was tearing up a piece of bacon for my oldest daughter and accidently licked my fingers, talk about instant gagging. The taste stayed in my mouth for about an hour. Honestly, I’m someone that use to love Bacon, but now just the smell, nauseates me. Interesting, don’t you think? It’s amazing what are bodies don’t need once we take the time to start listening to it.
In the wonderful, little piece of heaven book called, Skinny Bitch, she gives advice to her readers to be deliberate about eating meat again and choose a day and specific meat source to consume. The author advises new Vegans/Vegetarians to do this, so they can observe how their body reacts to the meat after detoxing from it. Originally, I shared with my husband that I was going to eat Turkey on Thanksgiving as my deliberate choice. Since we are going to be visiting family in Southern California over the holidays, I’ve decided against that. I’m not sure when or if, I’m going to consume meat again, in order to scientifically observe my body. Currently, I’m just enjoying the meat free, veggie loving life.

There is mountains of information out there on the topic, but I thought I would start with this basic article from Worldwatch that was sent to me by a friend. This was one of a few reasons that I decided to try out becoming a Vegetarian. It's been 1 month 1 week 6 days! Whoop Whoop!

30 days since I've went Veggie

I'm in my second quarter of Nursing School right now so it doesn't leave me with a lot of extra time for blog writing. I'm just happy to report today that it's been 30 days since the last time I ate meat and I feel great and still no coffee/caffeine either (2 months). It's been a little harder to lay off the sweets. School for me = stress eating! So my goal is to really buckle down on my next level of eating during my next break from school at the end of September.

Thank you to everyone that has emailed me recipes and has posted things on Face-book, it really means a great deal to me!

I've posted a picture of the only thing I really drink besides water - LOVE Tazo tea!

Chelsea's Vegetarian Lasagna

All Organic: estimating I might have spent maybe $2.00 more on the entire meal to make sure the ingredients are fresh and good for my family! 


Lasagna noodles 
1 container of Spaghetti Sauce
2 eggs
1 15 oz. container (skim or low fat) ricotta cheese
1 8 oz. package Mozzarella cheese (can use other cheeses if you like)
2 small (or 1 large) zucchini
2 small (or 1 large) summer squash
1 package mushrooms
1 medium onion
2 garlic minced 
1 green pepper and red pepper
1 small eggplant
Salt & Pepper






1. Cook noodles according to instructions (add 1 tablespoon Olive Oil and 1 teaspoon salt to water)


2. Chop all vegetables and saute with garlic & Extra Virgin Olive Oil


3. Add a cup of sauce in with the vegetables and set aside


4. In a pan place the ricotta, eggs (beaten), salt, pepper and blend


5. Layer in a baking pan : start with the vegetable mixture, then sprinkle the Mozzarella, then a layer of lasagna noodles, then spread the Ricotta/egg mixture, then another layer of the tomato/vegetables and so on until you run out of ingredients or the pan is filled.


6. Have the top layer be tomato/vegetables and Mozzarella. 


7. Bake at about 375 degrees for about one hour.


I also added whole fresh basil during the last 5 mins!


All cheese was made with milk from cows not treated with rBGH. Sourced from Family Farms. Organic by Quality Assurance International & USDA!






Not the greatest picture in the world but it was GOOD! Next time it will be prettier!

kom·bu·cha


Kombucha is an effervescent tea-based beverage that is often drunk for its health benefits or medicinal purposes. There is limited scientific information supporting any health benefit and few studies are being conducted, although there are several centuries of anecdotal accounts supporting some of the health benefits attributed to the tea. Kombucha is available commercially and can be made at home by fermenting tea using a visible, solid mass of yeast and bacteria which forms the kombucha culture which is often referred to as the "mushroom" or the "mother".
So I just ran into Guava flavored Kombucha: Love it! The only advice I have is DO NOT SHAKE. I purchase it at Harmons or Whole Foods!

Grocery shopping just isn't the same

Whole Foods = amazing!

The problem is Justin & I went to Walmart tonight to finish up our shopping and we left with little to nothing in our shopping cart. Obviously our brains have started to mold into the Organic/Veggie Free lifestyle. So tomorrow we are making another trip to Whole Foods to finish up our shopping. And we are going to the Salt Lake Farmer's Market for the first time tomorrow morning!
